Description
12.5% abv | Traditional “saignee” method is used – where the crushed red grapes are soaked until the desired color is achieved and then the tanks are drained of all juice and/or must. Fermentation is at low temperature in stainless steel vats and bottled immediately | Dry round and full of finesse. Surprisingly complex with intriguing notes of raspberries cherries black olive and fennel.
